After many requests and diet questions, we created this What We Eat In A Day video to show you what a regular eating day for us is while living in Costa Rica. We love following a plant based diet as it allows us to eat an abundant amount of fresh and naturals foods that fuels us in every way but that doesn’t put any calorie restrictions.

Here are the ingredients & measurements to the meals featured in this video:

Boho Superfood Smoothie Bowl

*Serves 1-2


2 cups frozen bananas
1 cup pineapple
1 cup ice
1 cup coconut water (or other plant based milk)
1 tsp maca powder
1 tsp spirulina
1 tsp Green Power Blend (wheatgrass, alfalfa, moringa, chlorella,
1 tbsp hemp hearts


1 cup unsweetened granola mix
1 mango (sliced)
1/2 pineapple
1 tsp cacao nibs
1 tsp goji berries


  1. Slice up all fruit
  2. Blend the smoothie ingredients in a blender until its a smooth texture (not too think and not too watery)
  3. Layer the bottom of a bowl/mason jar with granola and mangos
  4. Pour the smoothie and garnish with the remainder of the ingredients

     Enjoy immediately!

Tropical Tahini Summer Rolls

*Serves 4-6 Rolls (depending on how much veggies you stuff into one)


rice paper
1 cucumber
1 carrot (shredded)
1 red pepper
1 yellow pepper
1/8 purple cabbage (depending on size)
1/2 block smoked tofu (or regular lightly pan fried)
1/2 mango
1 cup fresh lettuce

Tahini Sauce:

2 cloves garlic
4 tbsp tahini paste
1/2 lemon (squeezed) + 2-3 tbsp water
1 tsp maple syrup


  1. Slice up all veggies and tofu
  2. Dip the rice paper into warm water for 5 seconds
  3. Transfer the rice paper to dry surface and begin to layer the veggies
  4. Roll it up!

Tahini Sauce:

  1. Chop the garlic
  2. Place all ingredients into a blender
  3. Blend and add more ingredients if desired for better taste (ie. more lemon or water)



Pura Plant Based Burgers w/Spicy Yam Fries

*Serves 2

Yam Fries


1 Yam (large)
2 tbsp extra virgin olive oil
1 tsp chilly powder
2 cloves of garlic


  1. Preheat oven to 400F
  2. Slice the yam potato
  3. Mince the garlic
  4. Mix olive oil with garlic + spices



2 plant based patties
2 pineapple rings
1 tomato
2 lettuce leafs
1 tsp coconut oil
Gluten-Free or sourdough/rye organic bread


  1. Line the frying pan with coconut oil
  2. Grill the patty and pineapple
  3. Slice the tomatoes and prep the lettuce
  4. Place all ingredients on a bun or lettuce leaf



1 avocado
1/2 cup plant based milk
hint of lime


  1. Mash the avocado
  2. Add liquid and lime
  3. Whisk until its one smooth structure
